6 medium white potatoes (washed)
8 oz sour cream
1/4 cup butter
3-4 slices thick cut bacon
salt
water
In a large pot, add 8 cups of water. Bring water to boil. Cut the potatoes in half and place in pot. Cook for about 20 minutes or until tender but not overcooked.
While the potatoes are cooking, set oven to 425F. In a baking sheet, place bacon in long strips and cook in oven for about 15 minutes or until crispy. Once done, remove from oven and drain on a paper towel. When cooled, crumble bacon in a dish and set aside.
Drain the potatoes and let cool. When cool enough to handle, peel the potatoes and cut each cooked potato in half.
In a frying pan, melt the butter. Once butter is melted turn heat to low and add the sour cream. Add the potatoes. Add the salt to taste. Mix together slowly over low heat for about 3 minutes or until heated through.
Turn off stove and add crumbled bacon. Stir bacon in gently.
Serve warm as a side dish.
These potatoes were soooo good! I did a several tweaks though. I used 3 large russett potatoes. I peeled and cubed them since I did not want to peel hot potatoes and did not want big chunks of potatoes. I cooked the bacon in the microwave to get it crispy and used more than 3-4 slices. I will be making this again!
