Tomato Vodka Cream Sauce

Tuesday was National Spaghetti Day so I had to make spaghetti for dinner. My husband does not like tomato (chunks of) so I don't make a tomato based dinner often. He is fine with plain sauce though and this Vodka Cream sauce I make.

Tomato Vodka Cream Sauce

1 15 oz can tomato sauce
1/4 cup heavy cream
1/4 cup vodka
Spicing as you see fit (garlic, red pepper flakes, oregano etc.)

Heat up the tomato sauce. Dump in Spices. Let bubble for a little bit. Stir in cream and vodka. Bring to boil stirring constantly. Lower heat and cover and cook for as long as you want, up to an hour. Use over pasta of choice.

This recipe can be doubled easily, just use a 28 oz can of sauce and 1/2 cup of cream and vodka.

Wednesday we ate out, no recipes from that. Last night I had some prepackaged pre-marinated Cornish Hens that I cooked up. Tonight is going to be scallop bacon Risotto which I will hopefully post up tomorrow!
