Crumb Topping:
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/4 cup creamy peanut butter
3 tablespoons butter
Cake:
2 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
2 eggs
1/2 cup peanut butter
1/4 cup butter softened
Preheat oven to 375F. Grease and flour a 13x9 pan. Make the streusel topping: In a small bowl combined 1/2 cup flour and 1/2 cup brown sugar. Cut in 1/4 cup peanut butter and 3 tablespoons butter until mixture resembled coarse crumbs. Set aside.
In a large bowl, mix together 2 cups flour, 1 cup brown sugar, baking powder, baking soda and salt. Make a well in the center and pour in the milk, eggs, 1/2 cup peanut butter and 1/4 cup butter. Mix well and pour into prepared pan. Spread evenly, then sprinkle streusel over top.
Bake in the preheated oven for 30 minutes or until toothpick inserted into the center of the cake comes out clean. Allow to cool.
Another cake inhaled! Really liked the difference of having streusel on top. I used the floured cooking spray to grease and flour the pan. The only tweak I did was add in some reeses peanut butter cup baking pieces. You could add in chocolate chips or leave it plain.
