I had a hankering for chicken fried steak. It appears The Pioneer Woman did also! I use the recipe from my Better Homes and Garden Cookbook and tweak just a little bit. But only with spices. And I make for two.
Chicken Fried Steak
2 cube steaks
Panko bread crumbs
Oregeno
Pepper
Seasoned Salt
Garlic Powder
1 Beaten Egg
1 Tablespoon Milk
2 Tablespoons cooking oil
1 small onion, slice and separated into rings
2 tablespoons all purpose flour
1 1/3 cups milk
Pour a pile of bread crumbs into a bowl. Add spices in whatever quantities you want. Mix together. Break egg into bowl and beat. Add in 1 tablespoon milk and beat some more.
Heat oil in large frying pan.
Take cube steak and dip in egg mixture. Make sure both sides are coated and then dip in bread crumbs, covering everything.
Place steaks in fry pan (one at a time depending on size) and cook both sides until crispy brown. You might have to add more oil during this process.
Remove steaks from pan and cut to make sure they are cooked through. If not, return to pan and continue cooking on a lower heat as to not burn the outside.
When steaks are done and removed from pan, throw the onion in the drippings and cook until tender but not brown. Stir in flour. Gradually stir in the 1 1/3 cups milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for one minute more. Add some pepper.
Serve meat on top of mashed potatoes and all covered in the gravy.
