Potato Soup

I made Potato Cheese soup. I usually make a version of Moosewood's Potato Soup but decided to play with a new recipe. I took a baked potato soup recipe and tweaked it!

Baked Potato Soup

3 Medium Potatoes, Baked
3 Tablespoons Butter
1 Onion diced
2 Tablespoons Flour
4 Cups Chicken Stock
2 Cups Water
1/4 Cup Cornstarch
1 1/2 Cups Instant Mashed Potato
3/4 Teaspoon Pepper
1 Cup 1/2 and 1/2
1 Cup Shredded Cheese (chedder, smoked gouda, whatever you want)
4 Rashers of Bacon, cooked crispy and crumbled

Bake potatoes until done. Remove from oven and cool.

As potatoes cool, melt butter in a large sauce pan and saute onion until light brown. Add the flour to the onions and make a roux.

Add stock, water, cornstarch, mashed potatoes and whatever spices you want to pot and bring to a boil. Reduce heat and simmer for 5 minutes

Cut potatoes in half and scoop out contents into the pot. Then add 1/2 and 1/2. Bring soup back into a boil. Lower heat and stir in cheese and bacon. Melt cheese.

Serve with crusty breads!
